MEAL PREP MONDAY: This Week's Breakfast Quiche

Hey guys,

I'm going to be trying out a new feature on the blog showing off the recipes that I used for the week. I am hoping to do this every week and going in with the best intentions, but bear with me as I work out the kinks and figure out the best way to do it. If I find a recipe from Instagram or online, I will definitely let you know whose page to follow.


This breakfast quiche is going to be my breakfast for the next 7 days. Well - ideally 7, but if I make it to 5 or 6, that's cool too. Basically, I want to make sure that I am not buying food this week at work.


Here's how to prepare it:



PREP TIME: 10 minutes
COOK TIME: 45 minutes

WHAT YOU'LL NEED:
1 egg
4 egg whites
1 gluten free pie crust (or any crust of your choice. I used Wholly Wholesome Gluten Free Pie Shell)
4 slices uncured turkey bacon, chopped
1/2 cup of milk (I used almond milk, but use any kind of your choice)
Flavor God "Everything Spicy" seasoning
1/2 a small onion
A bunch of fresh broccoli florets, cut small

STEPS:

Preheat your oven to 375 ( I set mine at 350 because my oven is crazy strong for some reason)

Whisk the egg whites, egg, Flavor God seasoning and milk together in a separate bowl.

Add your chopped turkey bacon, onion and broccoli to your thawed pie crust (if previously frozen).

Pour the egg mixture over the previous ingredients, spreading evenly across your crust.

Bake for 35-45 minutes or until the egg is no longer liquid. Should yield you about 8 servings.

Enjoy!

Of course you can add cheese, spinach, mushrooms or any other additional item you'd like. You can also opt to make this without the crust if you'd like. I like it as a simple, easy breakfast with some sliced peppers or avocado on the side. I packed 7 slices for the week ahead and left the last slice for my hubby to snack on tonight :)
